The pruning
It allows to grow young again the vine and to select fruit-bearing wood.
The bonding
It consists in attaching vine shoots to the wire and so to check the shoot.
The disbudding
It consists in cutting not fruit-bearing buds.
The tying-up and trellising
According to the shoot, we raise up the wires to preservate stalks and to avoid a muddled shoot.
The clipping
The clipping is done either manually with a clipper or with a tractor with a vine trimmer. It’s the way to cut unusuful shoots.
The grape harvests
The grape harvests are exclusively manual in Champagne. They take place 90 to 100 days after the bloom of the vine. After the picking up, the grapes are taken to the press-house to be weighed there. Then, the pressing can begin, it’s separated into two juices: the vintage and the second pressings.
